Taste of the sea
Eating fresh-caught fish by the sea is one of Ibiza’s special treats, a pleasure that can also be enjoyed all the year round. Grouper, sit-via (amberjack), John Dory, bullit de peix (lbicenco fish stew) and paella are just a few of the local specialities whose flavour is best at the water’s edge, with quivering light and breaking waves providing a memorable background to each new toast. Superb local wines, rich in subtle flavours, complete the symphony of senses, taking us to the very edge of bliss. It would be difficult to find fish and seafood as delicious as the varieties Ibicenco fishermen hand over every morning to local restaurants. Freshness and authentic flavour are enhanced by the beauty of local landscapes, multiplying the overall effect to the nth degree. Beaches with attractive natural settings such as Talamanca, Ses Salines, Es Cavallet, Cala Martina and Es Jondal take the pick of the catch throughout the year. At Sant Antoni’s Club Nautico and in the yacht marinas of Ibiza and Santa Eularia the flavour of the sea almost swamps the table. There are no end of enchanting spots all over the island, where you will find a cosy atmosphere, delicious food, and mild temperatures that allow you to eat in shirtsleeves under balmy winter sunshine. An unbeatable experience for those who enjoy savouring life to the full.
Each of Ibiza’s markets constitutes a marvellous bazaar of surprises, where you will come across clothes, jewellery, artwork, musical instruments, antiques, natural juices and delicious cakes, together with objects from far-flung corners all over the world. The diversity is enormous, both with regard to the products on sale and the multicultural origins of the people: hippies, artisans, musicians, merchants, executives, poets, painters… The most famous markets are those at Las Dalias, held every Saturday throughout the year, and Es Canar, held every Wednesday from April to October. Las Dalias also holds a traditional Christmas market, and on Monday evenings all year a craft market with jewellery, pottery and decorative objects. In summer there are even more markets scattered across the island, including those at Ses Figueretes (Ibiza), Passeig de ses Fonts (Sant Antoni) and S’Alamera (Santa Eularia – the Ramblas’). On Thursdays in summer a crafts market is also held in Sant Miguel. Treasures aplenty are to be found all over the White Island, in cosmopolitan settings suffused with the tang of that unconquered Ibiza whose original motto was Peace and Love.
Amazed at Es Vedra
Gala d’Hort Nature Park and the Nature Reserve of Es Vedra, Es Vedranell &the Western Isles offer impressive vignettes of Ibiza at its most unspoilt. This unique corner with its pine and sabina woods provides a refuge for many protected species, while all sorts of legends set off the scenic and environmental beauty. It is said, for example, that no sailor has ever perished in the waters surrounding Es Vedra, that miracles take place on this magical rock, and that humans can survive among its rugged crags thanks to supplies of fresh water and unexpected food. The long descent down to Sa Pedrera nearby — recently rebaptized ‘Atlantis’ — calls for reserves of patience as well as energy. Once down at the former quarry, however, there are surprises in store, including inscriptions left by adventurers and hippies attracted by the special Bermuda Triangle aura. On light-filled days it is hardly ever deserted, and the singular atmosphere brings together practitioners of yoga and meditation, as well as others in search of a special tranquillity. The steep climb up culminates with another mythical spot, the Savinar tower, originally built to keep a watch on Barbary pirates and now a magnet for hikers, photographers and fans of the esoteric. Here you can enjoy one of Ibiza’s most spectacular views, a sight known the whole world over. Equally impressive are the views of cliffs and islands from a becalmed sea. Whether paddling a kayak or sailing a yacht (or local Ilaiit), whoever comes close to Es Vedra and takes a dip in its crystal-clear waters can vouch for their extraordinary purity. The transparency and intense turquoise are just as seductive from above, whether in a plane, a balloon, or suspended from a hang-glider. Gala d’Hort and Es Vedra are synonymous with unsullied nature, history, legend and good omens.

If you’re a fan of underwater diving but have yet to try it out around Ibiza, you’ll be surprised by the extraordinary clarity of local waters, the range of species in this part of the Med, and the amazing number of caves and shipwrecks which loom up unexpectedly, some veritable treasure chests which attract divers from all over the world. Sea temperatures range from 14 to 28° C throughout the year, allowing divers to explore submarine caverns and grottos in the middle of winter. The island has various diving centres where professional staff provide equipment, organize excursions and are well informed about the ecological importance of the local marine environ-ment. Our dense seagrass meadows (Posidonia oceanica) were recently added to the World Heritage list as well as coral reefs, habitats that shelter over 200 marine species, including some on the critically-endangered list. The clearness and biological riches of these waters derive largely from the posidonia meadows, which act as an underwater lung for the entire western Mediterranean. Exploring this marine paradise, hidden beneath the surface, is yet another irresistible reason for taking a holiday in Ibiza.
